Cappuccino Muffins

There's nothing like a warm muffin--tender on the inside, crunchy bits of streusel on top. Muffins say I love you to a child, served with a cold glass of milk and some fresh fruit for breakfast. Muffins say welcome to guests who have shared our home overnight. Muffins say convenience for the traveling family who wants to pack their breakfast. (They also say disaster for the dad who has to clean the crumbs out of the van, but that's not our subject).

Years ago I scribbled this cappuccino muffin recipe on a piece of lined yellow notebook paper. I think I got it from my mom, who got it from a Taste of Home magazine. That yellow paper has lasted through the years and survived several moves. And cappuccino muffins are still are favorite.

If preparing the muffins the evening before, spoon the batter into muffin tins, cover with plastic wrap, and place in the fridge. In the morning, top with streusel and bake as normal. If you want to prepare for guests several days in advance, place cupcake papers in the tins and spoon batter into them. Freeze unbaked batter until solid, then transfer to a container. When ready to bake, place the batter back into the tins and top with streusel. Add a few extra minutes of baking time if they are still frozen.


Capuccino muffins

Cappuccino Muffins

1 C all-purpose flour
1 C whole-wheat flour
¼ C brown sugar
¼ C white sugar
2 tsp baking powder
2 tsp instant coffee granules
1 tsp cinnamon
¼ tsp salt
1 egg
1 C milk
½ C coconut oil or butter, melted
1 tsp vanilla
½ C semi-sweet chocolate chips

Streusel topping

6 tbsp all-purpose flour
¼ C brown sugar
½ tsp cinnamon
¼ C cold butter

Combine dry ingredients. Whisk egg, milk, butter, and vanilla together. Stir into dry ingredients just until moistened. Fold in chocolate chips. Top with streusel. Bake at 375° for 20-22 minutes.

Yield: 12 muffins

Note: The original recipe calls for all-white flour, twice as much sugar, and twice as many chocolate chips. Change it back if that's how you roll :)
